Interesting to see your technique. Last time I made dosas, the batter seemed to be too thick and didn't all cook properly. As soon as I would add it to the pan, it would kind of coagulate and clump up. I also used a non-stick pan. I really need to try it on a tawa. And with a bit thinner batter. At least the pappu pulusu turned out really well...:)

No, I'm not from Coimbatore. Although my accent has its roots in the 'Kongu belt', kosuru is a word that is quite commonly used in Madras and the media. Mine is a concoction of Kongu and Dindigul Tamil with some refinement over both regions in pronouncing certain sounds (la, La, zha etc).

Yeah, they are all the same. But for paniyaram you can experiment with extra garnishing. All 3 dishes have different varieties which follow slightly different mixes (cilantro idli, sweet paniyaram etc.). But the basic batter is the same.
